They say “eat your greens” – and God knows it’s not always easy. At least for me. Some days, I feel like healthy eating comes naturally to me. Other days… not so much. Not that I’m always just craving sugar and fat. But often times, unhealthy options are the easier choices. They’re at display, usually not more than a block away. I know that juices and smoothies are controversial, but I’m still partial to a good, freshly made green juice or vegetable based smoothie. It feels like they provide me with enough healthy pluses and vitamins to get me trough even the toughest day.
Occasionally, though, I verge from the classic green juice and experiment with colorful vegs and fruits instead. Pink juice, anyone? It’s officially a thing! Therapeutic in two ways: color therapy as well as healthy plus.

Yields: two glasses
Ingredients:
2 oranges, juice
1 red beet, peeled and finely chopped
1 handful kale (I used red kale; for the sake of the color), cleaned and chopped
1 piece ginger, peeled and grated
Directions:
Put the orange juice and the remaining ingredients into a blender. Blend very well until the juice is lump-free. Chill before drinking, if you want. Quickly stir through and foam up, then enjoy.[/twocol_one][fourcol_one_last][/fourcol_one_last][gap height=”20″]
