You darlings! I have to thank you for that overwhelming response to the design of the site and also the giveaway (still running until tomorrow, so make sure to enter a comment below the post). I would have never dreamed in my wildest dreams that anyone would be interested in receiving mail from me, but it appears you are! The comments from all over the world, the holiday greetings, the love and even the poems (yes!) are so sweet to read and they make my day and probably my week. And all the hot chocolate ideas… So fun! So, thank you, dears, you are awesome.
And then I have a story to tell. One of the exciting ones. So I’ve started this new job last week; in marketing…
Or actually in publishing. Both is true. It’s terrifying, that switch from advertising’s chaos to a corporate world, but also strangely gratifying. The people are extremely nice, remarkably so. And also talented, and everyone is always busy. And work ethics is extremely dutiful. Which is nice and inspiring and motivating. It’s different and I always like different. I’m super excited about what’s to come and where it’s going to lead me.
In terms of different; I don’t know when I started to love – i mean l-o-v-e – Cesar’s Dressing; but it started some time ago, maybe in summer, when I picked up this beautiful, fresh and crunchy lettuce at the shops and it reminded me of the existence of Cesar’s Dressing. And then, that summer night, I made a summery, classic version of a Cesar’s, with lots of garlicky, creamy dressing and warm croutons and chicken on the side. And then I got so addicted and my mind and body were craving garlicky salads that I couldn’t stop just there. We needed a fall suitable version. I wanted to make it yet more hearty. A salad that was a salad but also comforting and enough of a proper dinner in itself. Something that was oozing goodness and richness. This Kale Cesar’s was invented. Beautiful, delicious, hearty.[gap height=”20″]
[fourcol_one][/fourcol_one][twocol_one]Kale Cesar’s Salad
1 bunch (three large leaves) kale
3 slices bread, diced
2 tbsp. butter or ghee for frying the croutons
1 handful parmesan splinters
6 bacon slices
2 tbsp. mayonnaise
3 garlic cloves, minced
2 tbsp. apple cider vinegar
2 tbsp. olive oil
1 tsp. salt
pepper if desired
Wash the kale and cut into bite-sized chunks. Blanch shortly (for about 3 minutes) in hot water, drain and chill in ice cold water. Drain again and pat dry. In a pan, heat the butter, then fry the bread dices until golden brown and crispy. Salt a little and put aside. In the same pan, fry the bacon until crispy. In a small bowl, prepare the dressing. Combine the mayonnaise, vinegar, oil and garlic and combine well. Season with salt and pepper. Grate the parmesan. Divide the kale between two plates. Drizzle with the dressing, sprinkle with parmesan splinters, add croutons and top with warm bacon. Serve immediately.[/twocol_one][fourcol_one_last][/fourcol_one_last][gap height=”20″]
