Ingredients:
2 large zucchini, sliced
1 organic lemon, juice and zest
2 tbsp. good olive oil
1 tbsp. white wine vinegar
1 garlic clove, minced
1/2 tbsp. chili or spicy paprika flakes
1 tsp. fleur de sel
2 branches mint, leaves finely chopped
2 branches parsley, finely chopped
Directions:
Wash and slice the zucchini. Prepare a dressing: combine lemon zest, juice, olive oil, vinegar, garlic, chili and salt. Dress the zucchini slices with it and toss to marinate well from all sides.
