Christmas Decor & Cranberry Sauce Porridge
i discovered lately how it’s healthy to be a pessimist every now and then… ha! why, you ask? well, firstly, being an optimist is such hard work all the time… it’s exhausting. but to allow yourself some negativity every day is really therapeutic. i dubbed it ‘the daily dose of bashing’. we often indulge in it in our team at work. we just take turns in swearing, letting off steam and bashing random stuff (everyone and everything, really, starting with the weather, sometimes it’s the food, sometimes it’s the idiots that life puts in front of your nose…).

the rules we apply are that someone is bashing, and the others can enjoy it. and really, it makes my dear when others are swearing. haha. it gives me such a thrill and makes me snicker with delight. so, here’s the deal: i officially prescribe some healthy bashing, for all of you. yes, even though it’s christmas! be naughty. pssst, fuck santa! you know, you can be your own santa (it’s better to get yourself what you really want, yourself, anyway).
christmassy cranberry sauce porridge

serves 2
ingredients:
a couple spoonfuls of this cranberry sauce
1 cup rolled oats, fine
2 cups water (or milk, but i use water)
1 tsp. cinnamon
1 tbsp. sugar
1 tbsp. almond butter
1/4 cup dried cranberries
1/4 cup frozen raspberries
1/2 apple, finely sliced
maple syrup, if desired
directions:

toast the oats in a saucepan for a while, until a nutty flavor develops. stir to make sure they don’t burn. add the water, cinnamon. sugar, dried cranberries and raspberries and cook on low heat. then cover the lid, turn off the heat and let the porridge sit until all the liquid is soaked up. add the almond butter and stir to combine. arrange in bowls, garnish with a dollop of the cranberry sauce and the apple slices, add a bit of maple syrup if you feel sweet and serve warm.
